Un postre saludable: ponquecitos de zanahoria, harina de avena y miel

Es usual que nos den antojos en el transcurso de la tarde, especialmente de postre. Esto sucede porque los alimentos dulces nos proporcionan un subidón de energía, lo que es ideal para cuando nos sentimos cansados o desanimados. 

Sin embargo, darle a nuestro cuerpo alimentos calóricos, azucarados y sin nutrientes (como por ejemplo una gaseosa o un twinkie) solo nos dejarán más cansados y a la larga perjudicarán nuestra salud. Por esta razón, en estos últimos meses me he dedicado a explorar la repostería saludable: mi objetivo es que podamos consentirnos sin perjudicar a nuestro cuerpo. 

A continuación comparto con ustedes uno de mis inventos culinarios que me encantó, porque resulta muy saciante, nutritivo y es verdaderamente delicioso. Además, es muy sencillo de preparar.

Ingredientes (4 porciones o magdalenas)

– Una zanahoria rallada.

– Un huevo.

– Una taza de harina de avena (puedes licuar las hojuelas, no hace falta comprar la harina. Si lo deseas, puedes cernirla para que no quede grumosa).

– ¼ de taza de endulzante (estevia, papelón o panela, miel… Pero evita el azúcar refinada).

-¼ de taza de leche vegetal (puede ser de vaca en caso de que no tengas).

-Un chorrito de aceite (puede ser de coco o de oliva).

– Canela al gusto.

-Semillas de chía al gusto.

– Dos cucharadas de maizena o almidón de maíz (para darle esponjosidad).

– Una cucharadita de bicarbonato de sodio, polvo para hornear o vinagre.

Preparación

1.En un bol echamos el huevo y el endulzante de tu preferencia, junto con la leche y el chorrito de aceite; luego procedemos a mezclar, ya sea con la batidora o con una paleta. En lo personal prefiero la batidora.

2. Posteriormente, echamos la zanahoria rallada junto con la canela. Batimos de nuevo. Luego, vertemos la harina de avena y le añadimos la maizena y el bicarbonato. Recuerda ir precalentando el horno a 180° fahrenheit.

Importante: ten en cuenta que la avena absorbe el agua, así que quizás debas echar un poco más de leche. 

3. En un molde para ponquecitos (previamente engrasado y espolvoreado), vertemos nuestra mezcla. Ahora, se colocan las semillas de chía a modo de decoración; también puedes colocar un poquito de miel en forma de zic zac para darle un toque dulce y especial a tu postre. 

4. ¡Listo! Directo al horno. Cocínalos por aproximadamente 20 minutos. El tiempo de cocción puede variar de acuerdo a tu horno. El mío, por ejemplo, es muy pequeño y calienta con bastante lentitud.
